Yen Can Cook: 3 Cup Mini King Oyster Mushrooms (Vegetarian)
Seeing my pot of overgrown basil in my balcony garden and some of the leaves are starting to turn yellow, I decided to whip up this easy peasy 3 cup Mini King Oyster Mushrooms for dinner one evening. You may use any kind of mushrooms, such as Shiitake Mushrooms, Eryngii Mushrooms or Oyster Mushrooms.

Ingredients (Serve: 3-4)

250g mini King Oyster mushrooms, cut into bite size
1 1/2 tablespoons sesame oil
1 1/2 tablespoons Shaoxing wine
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1/2 teaspoon sugar
5 cloves garlic
6 slices ginger
A generous handful of fresh basil leaves
40ml water

Step 1: Heat sesame oil in wok and add garlic cloves, ginger, stir fry until fragrant.
Step 2: Add mushrooms, stir fry briefly. Sizzle Chinese wine and add light soy sauce, dark soy sauce, sugar and water. Stir evenly, and cover the lid to simmer for about 5 minutes, or until the mushrooms are cooked and tender soft.
Step 3: When the dish is cooked, stir in the fresh basil leaves before serving.

I have not bought this type of mushrooms before. Must try one day as they are meaty and suited for this type of dishes.
PH, actually prefer this mini version over the big one as they are more versatile 🙂

Any type of mushrooms…..I’m in! 😉 I’ve not cooked king oyster mushrooms before though. I especially like button mushrooms, the brown ones 🙂
Kris, yeah yeah, I like mushrooms too, basically cook once a week! The brown button mushrooms are mostly for Western style cooking though

TM, when I said it’s easy, mean really easy lah. I don’t like complicated recipe and those which need a lot of ingredients one I also lazy to try, hehe ^__^
