Yen Can Cook ~ Steamed Egg with Clams

Do you believe that this was my first attempt to steam egg? Instead of the plain steamed egg, I “challenged” the more elevated version of steamed egg with clams because I had some frozen Asari Clams from the frozen seafood package that I got recently.


Steamed Egg 蒸水蛋, literally translated as “steamed water egg” in Cantonese/Mandarin simply because the recipe itself is steaming the egg+water mixture. To get a silky smooth steamed egg custard, there are a few important steps that need to be followed.

♦ strain the egg mixture

♦ use low heat

♦ cover the egg mixture before steaming

 

Ingredients (Serve: 3-4)

4 large eggs

200g clams (I used frozen clams)

300ml water (included the essence in the frozen clams) 

1/2 teaspoon soy sauce

Chopped spring onion & extra soy sauce for garnishing and drizzles.

Step 1: In a bowl, crack the eggs, add in water and soy sauce. Beat the  egg mixture then strain the egg mixture into a heatproof plate/container.

Step 2: Cover with heatproof cling wrap/aluminium foil.

Step 3: Place the egg mixture into the prepared steamer and steam for 10 minutes with low heat.

Step 4: Remove from steamer, drizzle with soy sauce and chopped spring onions. Serve.

  • When I read your post title, I wasn’t expecting to see your steamed eggs with whole clams (shell and all)…lol! 😀 Yours turned out just as beautiful as KY’s but you mentioned to use low heat but KY said it doesn’t matter even if it’s on high heat…..hmmm, so which one should I use? 😉

    • Kris, I thought steamed egg with clams is supposedly looks like this?
      Since most of the recipes I referred to mentioned about low-medium heat for steaming, so I just followed. But since high heat works well too (KY’s post :P), I guess both also can.

      • Actually, I don’t know how steamed eggs with clams is supposed to look like as I’ve not eaten/encountered a version of steamed egg with clams…lol! 😀 But I would think to use only the meat from the clams only to avoid any sand (if any) getting into the smooth eggs and/or contend with the shells when eating it? ^_~

  • Your steamed egg with clams look so pretty and I am sure it is very delicious with the flavor from the clams. The surface of your steamed eggs is also smooth. I attempted steamed eggs a long time ago. I can’t even remember the taste LOL!
