Yen Can Cook ~ Sweet Potato Dessert Soup
This dessert soup aka Tong Sui most probably one of the easiest to prepare and only require four simple ingredients. In merely 15 minutes, you’ll get a bowl of delicious yet nutritious dessert, with tummy warming ginger broth and soft comforting pieces of sweet potatoes.
Sweet potatoes are a great source of fiber, vitamins, and minerals. In addition, sweet potatoes — especially the orange and purple varieties — are rich in antioxidants that protect your body from free radicals. So let’s eat more sweet potatoes! ᕙ(`▿´)ᕗ
Ingredients (serve: 3-4)
2-3 sweet potatoes, about 500-600g, peeled, cut into medium chunks
5 Pandan leaves, knotted
1 thumb-sized ginger, peeled & bruised
60g sugar/brown sugar
1000ml water
Note: Quantity of ginger and sugar can be adjusted according to personal preference.

Step 1: Place water and ginger in a sauce pot and bring to a boil. Lower the heat to a simmer for 10 minutes to let the ginger flavour infuse into the water.
Step 2: Add in sweet potatoes and Pandan leaves, cook for another 10-15 minutes, or until the sweet potatoes are soft enough.
Step 3: Add sugar and and adjust the sweetness to your preference. Stir to dissolve completely.
Step 4: Turn off heat, remove Pandan leaves and serve.
