Yen Can Cook ~ Dried Bok Choy & Peanut Porridge
Other than used as ingredient for Chinese boiled soup – Dried Bok Choy Soup aka “Choy Gon Tong” 菜干汤, dried Bok Choy also can be cooked into porridge with other ingredients such as peanuts and minced meat. Stumbled upon this porridge recipe and found that the combination of ingredients is pretty interesting. So, without further ado, I bought all the ingredients needed and came out with today’s recipe sharing!
Ingredients (Serve: 3-4)
1 cup rice, rinsed and frozen overnight (refer HERE for the reason I freeze the rice)
20g dried Bok Choy
50g minced pork
20g peanuts, soaked overnight
1800ml water
Salt to taste
Marinade
1 teaspoon soy sauce
1 teaspoon cooking wine
1/2 teaspoon sesame oil
A dash of pepper

Step 1: Soak the dried Bok Choy in water for at least a couple of hours. Rinse and wash thoroughly by flipping open the leaves under running tap water to get rid of some sand and dirt particles. When this is done, the Choy Kon should soften and lighter in color, drain and cut into small pieces.
Step 2: Combines ingredients of marinade in a bowl and marinate the minced pork for at least 30 minutes in fridge.
Step 3: Boil soaked peanuts with water for 45 minutes or until soften.
Step 4: In a deep pot, add in 1800ml water, frozen rice, boiled peanuts (Step 3) and dried Bok Choy (Steps 1), bring to boil then allow it to simmer on low heat. Stir occasionally to prevent the rice from sticking and burning to the bottom of the pot. Cook for 20-30 minutes until your preferred consistency.
Step 5: Add in marinated minced pork (Step 2). Cook for another 5 to 8 minutes and stir frequently.
Step 6: Add salt to taste.
Step 7: Served with drizzles of sesame oil + soy sauce + dashes of pepper if desired.

This porridge looks delicious and will get my partner’s seal of approval because he likes the rice grains still visible and not all mushy. I might try this one day but first got to look for the dried bok choy.
PH, do it do it, to surprise your lahling! I’m not sure is it my problem, I always cannot get mushy consistency for my porridge, but I saw people put into blender to blend it. O.O”

I love dry bok choy soup, so I would love this porridge too…but really dislike washing choy kon as sand or dirt tends to get trapped between the leaves. Eh, for someone who is not fond of porridge, I’m surprised you cooked it at home…for someone else in the family who loves porridge? 😉
Kris, although porridge not my favourite food but I will cook it occasionally especially when I run out of idea what dishes to cook because I can cook a pot of plain porridge then pair it with canned food such as luncheon meat, braised peanuts and fried dace with salted black beans. ^__*
