Yen Can Cook ~ Braised Pumpkin with Minced Meat

Pumpkin is very versatile and can be cooked in many different ways, in western or Chinese style. It can be roasted, stewed, stir-fried and make into salad. It’s one of my favourite vegetables to buy as pumpkin can be stored longer compared to leafy greens. On top of that, pumpkin is highly nutritious and particularly rich in Vitamin A. It is also rich in antioxidants and loaded with nutrients that can boost our immune system.


 

Ingredients (Serve: 3-4)

600g-700g pumpkin,  cut into large chunks

100g minced meat (pork or chicken)

1/4 thumb-sized ginger, chopped

3 cloves garlic, sliced

2 tablespoons cooking wine

2 tablespoons soy sauce

1/2 teaspoon oyster sauce

Sugar to taste

500ml water

Cooking oil

Chopped spring onion for garnishing (optional)

Step 1: Heat cooking oil in a claypot/wok, saute chopped ginger and sliced garlic till fragrant. 

Step 2:  Add in the minced meat and cook until the meat turns color. Add in cooking wine, soy sauce, oyster sauce and water.

Step 3: Add in pumpkin, bring the gravy to boil and simmer in low heat until the pumpkin chunks are soften to your preferred doneness.

Note: Add mixture of cornstarch + water to thicken the gravy (optional)

Step 4: Add sugar to taste.

Step 5: Garnish with chopped spring onion and serve.
