Yen Can Cook ~ Rice Cooker Pork Ribs Rice

I believe rice cooker is one of the essential kitchen appliances for any Asian family however it’s not applicable to my family.


Why?

When there’s a family member who is on carbo-less diet and the other two will be arguing who should eat more of that less than one cup of rice cooked, a normal rice cooker doesn’t seem like a necessity. So, all this while I was using a 1.2L mini rice cooker to cook that less-than-one-cup-of-rice for hubby and Sam for dinner.

But I always wanted to buy a “proper” rice cooker because those modern rice cookers’ function is not limited to cook rice only but also support programs for cooking porridge, stewing, baking and steaming which I only need to mix in the ingredients and press a button and stir every now and then for cooking porridge and stewing. There are also many one pot rice cooker meal recipes that I tempted to try too especially when I don’t want to spend too much time in the kitchen. Because all I have to do is add the ingredients and seasoning sauce to the rice cooker and press the “Cook” button.

Today’s super easy pork rib rice bowl recipe which is perfect for the lazy cook. 

 

Ingredients (Serve: 3-4)

2 cups jasmine rice

800g-1kg pork ribs

2 Lap Cheong (Chinese sausage), sliced

50g diced carrots

50g corn kernels

5-6 Shiitake Mushrooms, sliced/diced

1/2 thumb-sized ginger, sliced

Cooking oil

Sauce

2.5 tablespoons soy sauce

1 tablespoon cooking wine

1 tablespoon oyster sauce

1 tablespoons sugar

1.5 cups water

Step 1: Rinse jasmine rice with water, drain and transfer to the cooking bowl of a rice cooker.

Step 2: In a bowl, combine all ingredients of sauce, mix well and set aside.

Step 3: Heat cooking oil in a saute pan over low heat, saute ginger till fragrant the add in the  pork ribs can pan fry until slightly browned on both sides. Dish up and set aside.

Step 4: Add cooked pork ribs, Lap Cheong, mushrooms, corn and diced carrot into the cooking bowl over the rice (Step 1). Pour the sauce mixture (Step 2) over.

Step 5: Cook the rice in rice cooker as usual. After the button has switched to the “keep warm” setting, let it sit for about 5 minutes. 

Note: Add cooking time for extra 3-5 minutes if you want scorched rice. 

Step 6: Open the lid and fluff the rice with a paddle. Serve.
