Yen Can Cook ~ Tuna Okra Salad
I don’t know about you but salad that’s made from okra really sound odd to me. Being adventurous, I tried out the recipe anyway and it turned out to be quite “acceptable”. ٩(^▿^)۶

Ingredients (Serve: 3-4)
1 can canned tuna chunk in water, water discarded
6-8 okra, choose smaller/younger okra for softer texture
4-6 cheery tomatoes, quartered
100g corn kernels, steamed
2 tablespoons mayonnaise
1 teaspoon soy sauce
1 tablespoon white sesame

Step 1: Bring a pot of water to boil, add okra and cook for 2-3 minutes or until desired tenderness is reached. Remove and put into cold water.
Step 2: Drain the okra and thinly slice them diagonally. Set aside.
Step 3: In a salad bowl/big bowl, add in canned tuna, corn kernels, mayonnaise, soy sauce and white sesame, mix to combine.
Step 4: Add in sliced okra (Step 2) and cherry tomatoes, mix again to combine everything. Serve.

The okra added such a unique texture and taste to the salad, it’s definitely something I’ll be making again. 🍽️
The combination of the crunchy corn kernels, the soft and tangy cherry tomatoes, and the tuna was just perfect. The mayonnaise and soy sauce dressing was such a delightful surprise too! The white sesame added a nice touch at the end. 👌

Is okra one of your favourite vegetables? Since you even make omelette with it…lol! I’m sure it’s a tasty salad but I don’t think I can eat it as a salad as tuna & mayo can quite heavy (I’m one of those who don’t really like mayo dressing for salads)…but it’s game to try it as a sandwich filling…hehe! 😉
Kris, I can’t say okra is my favourire veggie, I eat it for the sake of its benefit, LOL.
I don’t like mayo dressing too but this recipe calls for mayo and I tried my best to put as little as I can. 😛
