Yen Can Cook ~ Walnuts & Peanuts Soup

By just reading the post title, many of you might think of those sweet dessert soups, in puree form that we usually can get from Chinese Tong Sui restaurant. I like those Tong Sui but make them at home is quite a tedious work, so just let the expert do it and we just enjoy the delicacy in the shop. (・ω<)


Today recipe is a savoury soup with two types of nuts that very easily obtained from any supermarkets or morning markets – walnuts and peanuts, together with some others usual boiled soup ingredients.

 

Ingredients (Serve: 3-4)

400g pork bones
30g peanuts, washed and soaked for 2 hours
30g walnuts, washed
2 dry candied dates
3pcs ginger
2500ml water
Salt to taste
To blanch the pork ribs (optional)
1 tablespoon of cooking wine
A few slices of ginger

Step 1: Put the pork bones/pork ribs/chicken, ginger and cooking wine into a pot of water and bring to a boil, to remove blood and impurities. Remove, drain and set aside.

Step 2: Put all the ingredients (except salt) into a pot and add in water until enough to immerse all the ingredients. Bring to a boil and lower the heat and let the soup simmer for 2-3 hours.

Step 3: Add salt to taste and serve.
