Yen Can Cook ~ One Pot Long Beans Rice (Rice Cooker Version)
I’ve been cooking a lot of one-pot rice recently. I love the convenience of one-pot meals especially on busy or lazy days. Today’s recipe is another easy one pot recipe using the rice cooker – a tasty and flavorful rice dish made with long beans, dried shrimp, carrot and seasonings.

Chicken Burdock Corn One Pot Rice
Ingredients (Serve: 3-4)
2 cups jasmine rice
150g long beans, cut into 2-inch pieces
50g dried shrimp
1/2 carrot, diced
1 packet Shimeji Musroom
4 cloves garlic, minced
3 shallots, thinly sliced
1 cups water
Cooking oil
Seasoning
1 tablespoon soy sauce
1.5 tablespoon oyster sauce
1 teaspoon salt

Step 1: Soak the dried shrimps with room temperature water until soft. Drained and pat dry.
Step 2: Rinse jasmine rice with water, drained and put into cooking bowl of rice cooker.
Step 3: Heat cooking oil in a wok, saute shallots until soft and fragrant. Add garlic and dried shrimp (Step 1) and continue to saute till both garlic and dried shrimps are browned and fragrant. Add long beans, carrot, mushrooms and seasonings. Stir-fry and mix everything well.
Step 4: Put the stir fried ingredients (Step 3) into the cooking bowl of rice cooker (Step 2) and mix well with the uncooked rice. Add water, it should be slightly lesser than what is usually required. Cook rice as usual.
Step 5: Open the lid and fluff the rice with a paddle. Serve.
