Yen Can Cook ~ Braised Oxtail with Daikon (Slow Cooker Version)

Inspired by PH‘s recipe of cooking oxtail (soup) in slow cooker, I used the same appliance to prepare my today’s recipe ~ Braised Oxtail with Daikon.


Oxtail, is literally the meat and bones of an ox’s tail. The cut has bone, bone marrow, lean meat, fat and connective tissue. When you slow cook/pressure cook it, it creates a rich stew or soup and the meat becomes tender that it can fall-off-the-bone.

This braised oxtail recipe was packed with savoury soy sauce and spices flavour that goes well with rice. I’ll recommend to thicken the sauce to make it a topping to serve with noodles. The braised oxtail is great as meal prep meal as well!

 

Ingredients (Serve: 3-4)

1kg oxtail, cut into 2 to 3 inch thick pieces if the oxtails are whole

1 Daikon/white radish, peeled and oblique cut/roll cut into small chunks

How to do oblique cut:  First cut at a 45-degree angle, give the Daikon a quarter turn, cut again, and repeat until you reach the end.

1 carrot, peeled and oblique cut/roll cut into small chunks

1/2 thumb-sized ginger, sliced

4 cloves garlic

2 star anise 

2 bay leaves

3 stalks spring onion, cut into to 3 inch length

100ml Chinese cooking wine, for eg: Shaoxing Wine

2 tablespoons soy sauce

1.5 tablespoons dark soy sauce

1/2 tablespoon rock sugar/regular sugar

230ml water 

Salt to taste

Cooking oil

Chopped spring onion for garnishing

To blanch the oxtail
1 tablespoon of cooking wine
A few slices of ginger

Step 1: Put the oxtail, ginger and cooking wine into a pot of water and bring to a boil, to remove blood and impurities. Drain, pat dry and set aside.

Step 2: Heat cooking oil in a frying pan or wok, brown the oxtail (Step 1) on all sides. Remove the oxtails and put into the slow cooker pot. 

Step 3: In the same pan, saute the ginger, garlic, star anise, bay leaves and spring onion until fragrant. Add cooking wine, dark soy sauce, light soy sauce, rock sugar and water, bring to a boil and transfer the mixture into the slow cooker pot.

Step 4: Turn on the slow cooker and cook on low heat for 5-6 hours, add Daikon and carrot, cook for another 1 hour. Alternatively, cook on high heat for 2-3 hours, add Daikon and carrot, cook for another 1 hour. Cooking time is depending on how tender you like your oxtails. 

Step 5: Season with salt to taste. Garnish with chopped spring onion and serve.
