Yen Can Cook ~ Minced Meat with Chives & Preserved Radish
Minced meat is a very versatile ingredient and it’s a more cost effective way for us to include meat in our weekly rotation, so it is often on my dinner menu. There are so many ways to enjoy it, such as braise it (think Taiwanese Lu Rou Fan and spaghetti Bolognese), stir fry, make into patty for steamed meat patty, burger patty or pan fried meat patty and make into meat balls. Today’s recipe of stir fried minced pork with chives and Choy Poh can be served as dish to pair with rice or topping for noodles or even steamed bean curd. It is also a meal-prep friendly recipe which can make your weekday dinner quick and easy. Extra ingredients can be added to turn this recipe into another dish, diced potatoes, carrot, cucumber or even zucchini are some good add ons I reckon. Add in Chili Boh if you like spicy!
Here is another version with dried shrimp.
Ingredients (Serve: 3-4)
300g minced pork
A bunch of chives, cut into 5cm in length.
80g preserved radish (Choy Poh)
3 cloves garlic, minced
3 shallots, minced
100ml water
Cooking oil
Seasoning
1/2 tablespoon oyster sauce
1 teaspoon sugar
1/2 teaspoon fish sauce
1/4 teaspoon pepper
Note: Seasoning is adjustable according to personal preference.

Step 1: Soak preserved radish in water for 3 minutes, drained and minced. Set aside.
Step 2: Heat up cooking oil in wok, saute the minced garlic, shallot and minced Choy Poh (Step 1) until fragrant.
Step 3: Add in minced meat and stir fry till 80% cooked, add in chives, seasoning and some water, continue stir fry and let the meat mixture simmer for a while (1 minute).
Step 4: Serve.

KY, I think it’s too strong flavour with Choy Poh, maybe you can omit it for baby.
