Yen Can Cook: Vegetarian ABC Soup
I dare to say many of us grew up drinking this soup and continue to enjoy it to this day. The preparation is just as its name suggested, as easy as “ABC” – ABC Soup that is! Another reason why it is called ABC soup could be the vitamins A, B and C from the ingredients used to boil this soup. It is a very home style Chinese soup and the basic ingredients are tomatoes, onions, carrots and potatoes. But the recipe is flexible where other ingredients can be added such as corn, beetroot or even dried scallops. Meat (either pork or chicken) is usually added too but it could also be easily turned into a vegetarian soup by omitting the meat just like my today’s recipe. I also add in an extra ingredient which is ‘Zha Cai’ 榨菜(Sze Chuan pickled mustard plant stem), to enhance the flavour of the soup.
Ingredients (Serve: 3-4)
2-3 tomatoes, quartered
1 large onion, peeled & quartered
2 pototoes, peeled & cut into chunks
1 carrot, peeled & cut into rough chunks
1 corn, cut into chunks
1 Sze Chuan pickled mustard plant stem
Salt to taste
2500ml water

Step 1: Rinse the Sze Chuan pickled mustard plant stem with water to remove the chilies paste. Soak the vegetable in water for 10 minutes to reduce the saltiness. You can cut a small bit to taste on the saltiness before slicing it.
Step 2: Put all the vegetables into a pot of water, bring to a boil. Lower the heat and let the soup simmer for 20 – 30 minutes until the carrot and potatoes are tender.
Step 3: Add salt to taste & serve.

This soup is most laku whenever my mom boils it. I also like adding the pickled mustard.
