Yen Can Cook ~ Air Fried Garlic Chicken Breast
I never a fan of chicken breast because of its tough and dry texture (if it is overcooked or cooked in wrong method) but for the sake of healthier protein intake, I will buy chicken breast occasionally. I always prepare it with the most boring way which is pan fried or oven baked, then pair with salad or grilled vegetables.
Today’s recipe is one of the better chicken breast recipes that yields chicken popcorn with delicious savoury crust with hardly any effort. This dish is not only suitable as a meat dish but also great as beer snack or protein for your salad.
Ingredients (Serve: 3-4)
2pcs chicken breast, cut into bite size
8-10 cloves garlic
Cooking oil
Marinade
1.5 tablespoon soy sauce
1.5 tablespoon dark soy sauce
1.5 tablespoon Chinese cooking wine
1.5 tablespoon oyster sauce
1.5 tablespoon cornstarch
A dash of black pepper

Step 1: In a bowl mix together all the ingredients for marinade, stir to well combined. Put in the chicken cubes and marinate for at least 20 minutes.
Step 2: Preheat air fryer to 180°C. Line the air fryer basket with baking pepper/aluminium foil (for easier cleaning), brush/spray with some cooking oil, put in the marinated chicken cubes (Step 1) and garlic cloves.
Step 3: Air fry for 10 minutes at 180°C, turn the chicken halfway through the cooking time. Air fry for another 2 minutes at 200°C for further browning.
Step 4: Serve.

The chicken pieces look so well browned. I could try this and I believe that chicken breast can taste good. I once pan fried chicken breasts and continued cooking in the oven. I think the key is not to cook for too long. The meat turned out surprisingly moist and tender. I must try your recipe because my air fryer is sleeping on the kitchen rack for too long. LOL!

Kris, I never made sauces at home, that is Thai chili sauce I bought from FB live and it is really addictive and rather spicy too. Great pairing with this dish.
