Yen Can Cook ~ Amaranth (Yin Choy) in Superior Soup 上汤芫菜
Amaranth (Yin Choy) in Superior Soup which combines vegetable and soup is one of the popular dishes at any Dai Chow stalls or restaurant. If you don’t like/can’t get Amaranth, spinach is another good option as well.
Ingredients (Serve: 3-4)
250g – 300g Amaranth
1 salted egg, sliced
1 century egg, sliced
50g anchovies, rinsed
4 cloves garlic, sliced
1 tablespoon Shaoxing wine/cooking wine
400 ml water
Cooking oil
Soy sauce to taste
1/2 teaspoon sesame oil

Step 1: Heat up the cooking oil in a pot, stir fried the anchovies and 1/2 part of the sliced garlic till fragrant. Add in the water and bring to a boil. Reduce heat to a simmer and continue for another 10-15 minutes. Strain the broth into another bowl and discard the anchovies and garlic.
Step 2: Heat up some cooking oil in a deep skillet, add the balance sliced garlic and slightly browned the garlic. Add in Amaranth and stir fry until they just wilted.
Step 3: Add the anchovies stock (Step 1), century egg, salted egg and sugar. Bring to a simmer for about a minute. Add Shaoxing wine and continue to simmer for another one minute. Add soy sauce to taste. Drizzled with sesame oil and serve.

Delicious soup cum stir fry. I cook it exactly like this too…..minus the Shaoxing wine & sesame oil 🙂 We are now in CMCO stage (conditional MCO), so can go out a bit….but only if absolutely necessary. #Still stayathome.
