Ok, go back to today’s recipe which is a nourishing soup with “cooling” effect because both main ingredients of arrowroot and water chestnuts are believed to be beneficial to dispelling internal heat. Hope you like the recipe and enjoy the soup!

Ingredients (Serve: 3-4)
400g pork ribs/pork soup bones/chicken
A medium size arrowroot (500 – 800g), peeled and cut into large chunks
8-10 water chestnuts, peeled.
50g black eyed peas, soaked in water for at least 3 hours
10g Ophiogon (Mai Dong)
1pcs dried tangerine peel
1 slices ginger
2500ml water
salt to taste

Step 1: Put the pork ribs/pork soup bones/chicken into a pot of water, add in cooking wine and ginger, bring to a boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: Put all the ingredients (except salt) into a pot and add in water until enough to immerse all the ingredients. Bring to a boil and lower the heat and let the soup simmer for 2-3 hours.
Step 3: Season with salt and serve.

I’ve never boiled soup with arrowroot before….don’t even know what it looks like in its raw form…lol. But I would think this is tasty with the sweetness of the water chestnuts…I’d like to drink just the soup…hehehe! 😉

I love soups! I have only made soups with meat, onions, garlic and veggies but not with any herbs. I am not familiar with arrowroot in its raw form but I have heard of arrowroot powder.
