Yen Can Cook ~ Brinjal with Preserved Mustard Greens (Mui Choy)

I know, I know, today’s dish isn’t visually appealing and rather unappetizing for its dull colour. T.T


You can’t have your cake and eat it too. To make this dish a healthier version, I steamed the brinjal instead of frying it, because of that the brinjal lost its gorgeous purple colour. Though the taste of cooked eggplant won’t be affected, the brown eggplant doesn’t look nice in terms of presentation, just like my dish. Q_Q 

So, you can options of steaming your brinjal like I did or frying it to retain the colour of the vegetable.

 

Ingredients (Serve: 3-4)

1 long brinjal

100g preserved mustard greens (Mui Choy)

3 cloves garlic, minced

1/2 tablespoon soy sauce

1/2 teaspoon dark soy sauce

1 chili/ 2-3 bird eye chilies, cut into rings (optional)

100ml water

Sugar to taste

Cooking oil

Chopped spring onion for garnishing (optional)

Step 1: Wash and soak the preserved mustard greens (Mui Choy) multiple times to remove the sand, until the water runs clear. Let it soak for 30 minutes.

Step 2: Rinse and squeeze dry the Mui Choy as much as possible, cut into small pieces. 

Note: Skip these 2 steps if you’re using the convenient pack like photo below.

Step 3: Cut brinjal into strips (3 inch length), steam for 10-15 minutes or until softened. 

Step 4: Heat up cooking oil in a wok, stir fry the chopped garlic till fragrant. Add in the Mui Choy (Step 2) and continue to stir fry to mix well.

Step 5: Add in steamed brinjal (Step 3), soy sauce, dark soy sauce and chili rings, stir fry to mix. Pour in water then let it braised until the most of the water has evaporated or until your preferred doneness. Stir fry occasionally during this step to avoid burnt on the bottom.

Step 6: Add sugar to taste. Sprinkle with chopped spring onions and serve.
