Yen Can Cook ~ Broccoli & Tuna Pasta
Kris told me that one of the reasons she does not make her own sandwich at home is her family members aren’t sandwich fan and she has problem to finish a whole can of tuna if she opens a new can of tuna to make small portion of sandwich.
So here’s the recipe that I promised to share with her which she can use up her leftover canned tuna. \(^◇^)/
Ingredients (Serve: 3-4)
300g macaroni/fusilli/rotini
1 head broccoli (approximately 200g), chopped into small florets
1 canned tuna (in water or olive oil), drained & break up into smaller pieces
2 cloves garlic, finely chopped
Salt and black pepper to taste
2 tablespoon olive oil

Step 1: Cook the broccoli in a saucepan of boiling water for 1 to 2 minutes until only just tender. Drain well and set aside.
Step 2: In the same saucepan, add in salt and olive oil, cook the pasta following pack instructions, MINUS 1 minute. Drain and set aside.
Step 3: Heat the olive oil in a pan over a medium-low heat. Add the minced garlic, stir fry until fragrant.
Step 4: Add in blanched broccoli (Step 1), tuna and pasta (Step 2), stir to combine and cook for 1 minute. Add in some water if too dry.
Step 5: Add salt and black pepper to taste. Serve.

Oh, thanks for showing me what I can do with my leftover tuna (in fact, I just bought tuna sandwiches from Family Mart this morning…hehe!). This is one recipe I know I’ll make coz it’s simple and healthy. P/S: Actually I do make sandwiches at home, just not tuna sandwiches since I can’t finish a whole can myself. My family do eat sandwiches but only if they’re bacon, ham, luncheon meat or omelette sandwiches….kekeke! 😉

I seldom make sandwiches as home, those with loaf, but I do keep some lotus/burger buns in my fridge to make burgers. 🙂
