Yen Can Cook ~ French Beans & Potato Stir Fry (Vegetarian)
French Beans, or more commonly known as green beans, are rich in vitamins A, C, and K. They are also a good source of folic acid and heart-protective calcium, and fiber. Today’s vegan and gluten free recipe is combination of green beans and potato stir fry, which be ready to eat in less than 20 minutes.
Ingredients (Serve: 3-4)
300g French Beans
1 medium-sized potato
1/2 thumb-sized ginger, julliened
Cooking oil
Seasoning
1/2 teaspoon soy sauce
1/2 teaspoon vegetarian oyster sauce or mushroom seasoning granules
A dash of black pepper
100ml water

Step 1: Trim the tough end of the French Beans, cut into 6cm lengths.
Step 2: Peel the potato and cut into evenly sized strips (approximately 1cm thickness). Rinse the potato strips and drain thoroughly. Pat dry with paper towels.
Step 3: Bring a pot of water to boil, add in 1/2 teaspoon of salt and a drizzle of cooking oil (not in ingredient list), blanch the French Beans (Step 1) for one minute. Rinse the French beans with cold water, drain and pat dry with paper towels.
Step 4: Heat up cooking oil in wok over high heat. Add the ginger and stir fry until fragrant.
Step 5: Add in potato (Step 2), stir fry for 2 minutes then add in blanched French Beans (Step 3) and all ingredients of seasoning EXCEPT black pepper. Mix well, cover the lid and let it cook for another 2 minutes or until both French Beans and potato are soften. Sprinkle with black pepper, stir to mix.
Step 6: Dish out and serve.

I’ve stir-fried both these….separately…but never together…lol! Can be a one-dish meal, got carbs & veggies in one plate.
Kris, I like your idea, one-dish meal, but I’ll add some protein in it to make it make wholesome!
This looks simple enough, I usually do mine with dried shrimp & cilipadi
