Yen Can Cook: Hairy Gourd with Glass Noodles & Dried Shrimps
Still remember I’ve whipped up a quick hairy gourd soup recipe before? (Click HERE for recipe) Here’s another stir fried dish I’ve tried by using hair gourd, glass noodles and dried shrimps.
Ingredients
Half hairy gourd
Half packet of glass noodle
Handful of dried shrimps
4 cloves garlic, roughly chopped
1 tablespoon or to taste light soy sauce
1 cup water or vegetables/ chicken broth
Cooking oil
Step 1: Wash and remove skin and seeds of hairy gourd, cut into thin strips.
Step 2: Soak the glass noodles with room temperature water until soft.
Step 3: Soak the dried shrimps with room temperature water until soft, this also will help to remove the excess saltiness.
Step 4: Heat up the wok, add in cooking oil. Add in dried shrimps and fry till aromatic. Then add the garlic, fry till golden brown.
Step 5: Add hairy gourd and sauté for 5 minutes.
Step 6: When the hair gourd slightly soften, add in water and glass noodles. Simmer for 5 minutes.
Step 7: When glass noodles has soften, season with soy sauce to taste.
Step 8: Serve.
Amount of dried shrimp can be adjusted according to personal preference, I like mine with lots of them 😛
