Yen Can Cook ~ Kinpira Gobo Stir Fried Udon

Kinpira 金平 is a Japanese cooking style which involve stir fry and simmer some certain ingredients with sugar and soy sauce. While Gobo is burdock so Kinpira Gobo 金平牛蒡 is braised burdock root and carrot in a sweet and soy sauce, a popular and common dish in any Japanese household. Kinpira Gobo is a great side dish you can make ahead and can be kept in the fridge. Today’s recipe is combing the Kinpira Gobo and meat slices to stir fry udon, quite mild in taste to be honest but very suitable as bento or food prep.


 

Ingredients (Serve: 3-4)

250g pork slices

1 onion, sliced

1/2 carrot (approximately 30g), sliced

60g burdock, sliced

10pcs snap peas. cut half and blanched.

350g udon, slightly blanch in hot water.

Salt & black pepper to taste

Cooking oil

Kinpira Sauce

2 tablespoons sugar

3 tablespoons sake

3 tablespoons soy sauce

1.5 teaspoons sesame oil

Step 1: In a bowl, mix all the ingredients of the Kinpira sauce until evenly combined.

Step 2: Heat the wok over high heat and add cooking oil to stir fry onion, carrot and burdock till soften. Add in pork slices and continue cook until the meat changed colour. 

Step 3: Add in blanched udon and pour in sauce mixture (Step 1). Stir fry until udon is evenly coated with the sauce. Continue to stir fry for 1-2 minutes to let the heat enhance the aroma of the sauce.

Step 4: Add in blanched snap peas and season with black pepper and salt.

Step 5: Serve.
