Yen Can Cook ~ Lemon Garlic Prawn Skewers
Easy grilled shrimp skewers where shrimp is marinated in a simple garlic and lemon marinade then threaded on skewers and cooked on a grill/oven. Theses skewers literally take only a few minutes under the grill and they are packed with flavours, great as appetizer and will be a hit at your next home party or any gathering.
Ingredients (Serve: 3-4)
2 tablespoon olive oil
4 cloves garlic
60ml lemon juice
1 teaspoon salt
1 teaspoon black pepper
1 red chili, seeded and finely chopped (optional)
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: In a bowl, combine all ingredients of marinade and mix until well combined.
Step 2: Marinate the prawns in the marinade for at least 15 minutes in refrigerator.
Step 3: Thread shrimps (Step 2) on skewers. Soak bamboo/wooden skewers for 30 minutes before using.
Step 4: Preheat the oven/grill to 200°C.
Step 5: Grill the prawns for 2-3 minutes each side or until prawns are cooked through.
Note: You may cook the prawns on grill pan as well.
Step 6: Serve skewers with lemon wedges, aioli or mayonnaise, if desired.
