Yen Can Cook ~ Niku Udon (Beef Udon)
Niku Udon, a simple soupy noodles dish with tender sliced beef, unquestionably the perfect comfort food for the recent rainy evening.
Ingredients (Serve 3-4)
3 packets udon
1/2 onion, sliced
350g sliced beef
6 tablespoons sake
3 tablespoons sugar
3 tablespoons soy sauce
1200ml dashi/water
salt to taste
Cooking oil
Chopped spring onion for garnishing

Step 1: Cook the frozen udon noodles in boiling water for 1 minute. Drain water and transfer to serving bowl.
Step 2: Heat oil in a pot, add in sliced onion and stir fry it turns transparent and fragrant.
Step 3: Add beef and cook until the beef turns color. Add sake, soy sauce and sugar and continue stir fry to let the beef absorb the flavours.
Step 4: Pour in dashi/water and bring to boil. Reduce heat to low and continue summer for another 1-2 minutes. Skim the scum and season with salt if desired.
Step 5: Pour the hot soup over the udon noodles in the bowl (Step 1), garnish with chopped spring onion.

I finished up the last 3 packets of udon and won’t buy anymore. But I am sure I can use other noodles for this.
