Yen Can Cook ~ Salted Egg Lady Finger
How you normally cook the lady finger? I always steam it then topped with fried shallot oil. Another popular recipe would be stir fried with sambal, but it never appeared on my dining table as Sam still cannot take spicy food. Today’s recipe call for salted egg and lady finger. Although the combination of salted egg and vegetables is not something new but with lady finger, it’s definitely first time for me!Β
Ingredients (Serve 3-4)
300g lady finger
2 cooked salted egg, separate the egg white and egg yolk
2 bulbs garlic, minced
Cooking oil
Water
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Mash the salted egg yolk and chop the egg white, set aside.Β
Step 2: Diagonally cut the lady finger or cut into 1cm length.
Step 3: Heat up a wok with cooking oil, add in minced garlic and stir fry until fragrant.
Step 4: Add in the mashed salted egg york, cook until foamy.
Step 5: Add in lady finger and stir fry to let the egg yolk coated evenly on the lady finger.
Step 6: Add in chopped salted egg white and a splash of water, continue stir fry for 4-5 minutes until the lady finger fully cooked.
Step 7: Serve.

You’ve just given me an idea…I’ve never paired ladies finger with salted egg before. Will give it a try. Did you get your ladies finger and salted egg from the supermarket? They don’t look the freshest… I guess this is the cost of the MCO, fresh ingredients are hard to come by.
Kris, this dish I cooked before MCO. Why the sad looking lady finger? Because I put them in fridge for days before I cooking them π The salted egg, I think it always depends on luck to get a beautiful nice salted egg, with golden egg yolk. π

Sean, yeah, YTF okra, but sometime we get some very old okra which is very fibrous and hard to eat π
