Yen Can Cook ~ Stir Fried Choy Sum with Mushrooms (Vegetarian)
Choy Sum 菜心 in Cantonese or Cai Xin in Mandarin, literally translated as “heart of the vegetable” is a type of green leafy vegetable which can be characterized by the distinct yellow flowers which it bears.
Stir fry and blanching Choy Sum (then tossed with oyster or soy sauce) are common ways to prepare this vegetable. Today I’m going to share with you an easy, quick and healthy recipe of Choy Sum stir fry with Shiitake mushrooms. The mushrooms contribute an unique aroma and the Choy Sum provides crunchy texture and mild sweet taste.
Ingredients (Serve: 3-4)
500g Choy Sum, rinsed and drained
8 fresh Shiitake mushrooms, sliced
4-5 cloves garlic, sliced/minced
Cooking oil
Salt to taste

Step 1: Trim off the end of the Choy Sum stalks then cut into smaller pieces.
Step 2: Heat up cooking oil in wok and stir fry garlic until aromatic.
Step 3: Add in Shiitake Mushrooms and do a few quick stirs then add in Choy Sum (Step 1). Fry for around 1 minute until well cooked.
Step 4: Season with salt.
Step 5: Serve.

Ths Choy Sum is a favourite of my whole family except me. I do eat them but not my top choice. Maybe they don’t know how to cook this well.
