Yen Can Cook ~ Stir Fried French Beans with Minced Meat
Since I’m a working mom who works 9-5, I only have time to go for my grocery shopping once a week, which is normally on Saturday after my weekly outdoor jog. So it’s crucial to have a grocery checklist to help make my grocery run more efficient. Besides this, knowing which vegetables or fruits with long shelf lives is also important, so that my family can enjoy them at its freshest condition throughout the week.
Gourd vegetables such as pumpkin and luffa, cabbage, cauliflower, corn, celery and today’s main ingredients – French beans, are some of the long lasting vegetables that I usually buy during my weekly grocery shopping. For leafy greens, I’ll get 2-3 types which will be consumed at the beginning of the week.
This Stir Fried French Beans with Minced Meat is a quick and easy Chinese stir-fry recipe that everyone loves.
Ingredients (Serve: 3-4)
300g French Beans
100g minced pork
3 cloves garlic, minced
Cooking oil
Seasoning
1 tablespoon fermented soy bean paste
1 tablespoon soy sauce
1 teaspoon sugar
A dash of white pepper
50ml water

Step 1: Trim the tough end of the French Beans, cut into 2.5 inch lengths. Set aside.
Step 2: Bring a pot of water to boil, blanch the French Beans (Step 1) for one minute. Drain and set aside.
Step 3: Heat up cooking oil in wok over high heat. Add the minced garlic and stir fry until fragrant.
Step 4: Add minced pork, and continue to stir-fry until pork is cooked through. Add in all ingredients of seasoning and blanched French Beans (Step 2), stir fry and toss to mix well. Continue to stir fry until the liquid has reduced considerably, about 30 seconds.
Step 5: Dish out and serve.
