Yen Can Cook ~ Stir Fried Mushroom with Oyster Sauce

Mushrooms are widely known for their great umami flavour and amazing health benefits. They pack with a ton of essential vitamins and minerals and can be cooked in many ways such as stir fried, cooked into soup, roasted or fried. Today home style mushroom stir fry features tender fresh Shiitake Mushrooms and red capsicum (bell pepper), with a savory sauce.
Ingredients (Serve: 3-4)
500g fresh Shiitake Mushrooms
1/2 capsicum/bell pepper (any colour), sliced
1/2 thumb-sized ginger, chopped
1/2 tablespoon oyster sauce
1/2 tablespoon soy sauce
1 teaspoon dark soy sauce
1 teaspoon sesame oil
Cooking oil

Step 1: Give the Shiitake mushrooms a quick rinse, dry with paper towel. Remove the stem and slice.
Step 2: Heat up cooking oil in wok, saute chopped ginger until fragrant.
Step 3: Then place the mushrooms (Step 1) in, add oyster sauce, soy sauce and dark soy sauce. The mushrooms will release water at the beginning, stir fry to evaporate most of the water.
Step 4: Add in sliced capsicum and sesame oil, stir to mix.
Step 5: Serve.

This dish looks very yummy without meat. It’s ideal for my special diet now.
TM, you may substitute the oyster sauce with vegetarian one for a vegetarian version.
