Yen Can Cook: Braised Pork Belly & Potato with Sesame Miso Sauce
This is one of the popular home style dish in Japan but don’t worry about the ingredients as all the needed ingredients are easily obtained and I believe most of them are available in your pantry. I love the fragrance of the sesame seed in this dish and the gravy is extremely goes well with white rice!
Ingredients
200g sliced pork bellies (I use thin pork belly slices for shabu shabu, can substitute with beef too )

2 potatoes (cut into cubes)
1 carrot (cut into cubes)

1.5 tablespoon miso
3 tablespoon white sesame (grind into powder form)
Seasoning (A)
1 tablespoon sake
1 tablespoon soy sauce
1 tablespoon mirin
1/2 tablespoon sugar
300cc water
Sesame seeds and spring onions for garnishing

Step 1: Mix the ground sesame seeds and miso in a bowl.
Step 2: Mix all the ingredients of Seasoning (A) in another bowl.
Step 3: Heat oil a pot, add in pork belly slices cook until change colour then add in potato and carrot cubes. Cook 1-2 minutes.
Step 4: Add in sauce mixture (Step 2). Don’t pour all, keep some for later usage. Cover the pot and let all the ingredients simmer under low fire for 10 – 15 minutes or until the carrot has soften. Add water if the gravy running low.
Step 5: Add the balance of Seasoning (A) in Step 4 with the mixture of miso + ground sesame seed (Step 1).
Step 6: Check on the texture of the carrot, pour in the mixture (Step 5) when the carrot cubes are soft.
Step 7: Let it boil for 30 seconds then off the fire. (Don’t let the gravy boil for too long as the miso will lost its flavors after long cooking time)
Step 8: Sprinkle with sesame seeds and spring onion, serve with white rice.
Tips: Another vegetable that can add in is yellow onion.

I’ve never cooked anything with miso paste before.
Oh really? Actually I like to miso baked fish too! Brush a layer on fish (I normally use Salmon) then bake till cooked.
