Yen Can Cook ~ Hairy Gourd Soup

Guess how long it takes to make this super simple one-pot hairy gourd soup. 10 minutes – Yep, 10!  Homemade, delicious soup in no time at all – You are welcome! (^o^)v


 

Ingredients (Serve: 3-4)

1 hairy gourd, 

150g thinly sliced pork (pork belly, pork loin or pork shoulder)

2 salted egg, cooked and cut into small pieces

1/4 thumb-sized ginger, sliced

1 tablespoon Chinese cooking wine

A handful of wolfberries (Goji)

1200ml hot water

cooking oil

Salt and pepper to taste

Marinade

1 teaspoon salt

A dash of pepper

1 teaspoon corn starch

1 teaspoon cooking oil

Step 1: In a bowl, add in the all the ingredients of marinade EXCEPT cooking oil, mix until well combined. Add in sliced pork, rub the marinade on the pork evenly. Pour in the cooking oil and mix to combine. Marinate for 15 -20 minutes.

Step 2: Peel the skin of the hairy gourd, cut lengthwise then sliced into thin slices.

Step 3: Heat up cooking oil in a wok/pot, pan fried the sliced ginger and salted egg for 1 minute. Swirl in the cooking wine then followed by the hot water.

Step 4: Add in the sliced hair gourd (Step 2), cover the lid and let it boil for 5 minutes.

Step 5: Add in marinated pork slices, continue to simmer until the meat are fully cooked. Add in wolfberries and season with salt and pepper to taste.

Step 6: Serve.
