Yen Can Cook ~ Blanched Spinach with Soy Sauce Dressing (Vegetarian)
Have your daily dose of healthy greens in a flash with this quick and simple recipe of Blanched Spinach with Soy Sauce Dressing.
Ingredients (Serve: 3-4)
450g-500g spinach, cleaned and cut into desired length
1/4 teaspoon sesame oil
1/2 teaspoon cooking oil
Dressing
1 teaspoon vegetarian oyster sauce
1 teaspoon soy sauce
A dash of salt and white pepper
1 teaspoon toasted sesame seeds

Step 1: In a bowl, combine all ingredients of dressing, mix well and set aside.
Step 2: Bring a large pot of water to the boil, add in 1/2 teaspoon cooking oil and blanch the spinach in boiling water for 30 seconds or until just wilted.
Step 3: Remove the spinach, set aside.
Step 4: Pour the dressing (Step 1) over the spinach, drizzle with sesame oil and serve.

Your blanched spinach is beautifully deep green and glossy. I know I will enjoy this, the taste is something like the spinach served as banchan at Korean restaurant, right?
PH, the blanching time is crucial and add some oil into the water will help to retain the colour of the vegetable. Yeah, it is similar with banchan but the flavour of this dish is more flavourful.
I cook spinach all the time. I don’t blanch but just stir-fry them (with chopped garlic) as they’re so quick to cook/wilt (sometimes I’ll add oyster sauce). Love to cook vegetables that are so fast to cook like spinach (and dragon vegetables). ^_~
Kris, blanching the spinach will help to reduce the astringent flavor of the spinach.
