Yen Can Cook ~ Chayote & Black Eyed Peas Soup
I have been very lazy recently to try out new recipe, hence the lack of update on the recipe post. Today’s recipe is the last one in my archive, so it’s time to get off my butt and work out the recipes research, cooking and photo shoot schedule!
Ingredients (Serve: 3-4)
1 chayote, peeled, halved (or cut into big chunks) and seed removed.
400g pork ribs/pork soup bones/chicken
6-8pcs chicken feet
60g black eyed peas, soaked in water for at least 3 hours
2500ml water
Salt to taste

Step 1: Put pork ribs/pork soup bones/chicken and chicken feet into a pot of water and bring to a boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: Put all the ingredients (except salt) into a pot and add in water until enough to immerse all the ingredients. Bring to a boil and lower the heat and let the soup simmer for 2-3 hours.
Step 3: Season with salt and serve.

This soup must be full of collagen because you added chicken feet. I am sure it is very tasty. I love chicken feet when it is cooked until soft.
