Yen Can Cook ~ Curry Udon

A quick and simple noodle dish that can be easily whipped up for a casual weekday dinner after work. A hearty bowl of slurpy thick noodles drenched in creamy and flavorful Japanese curry, is an anytime dish that works for me! My recipe is a rather simple one with meat slices, onion and mushroom. You may add in whatever you have in hand to make it a more wholesome and substantial meal.


 

Ingredients (Serve: 3-4)

4 servings udon

300g thinly sliced beef or your choice of protein

4 pieces of Japanese curry roux

1 yellow onion, sliced

1 packet Shimeji mushroom

2 tablespoon sake

3 teaspoon soy sauce

720ml dashi/water

Cooking oil

Chopped spring onion for garnishing (optional)

Step 1: Heat cooking oil over medium heat in a pot and add the sliced onion, stir fry until softened.

Step 2: Add the beef and cook until the meat change colour, pour in sake and dashi.

Step 3: Bring it to boil and reduce the heat to medium-low. Skim off the scum on the surface of the broth and continue to simmer for 5 minutes and turn off the heat.

Meanwhile, cook the udon according to the package instruction, drain and set aside.

Step 4: In a ladle, put in the curry roux cubes and a bit of the broth, dissolve them completely before releasing it to the broth. Turn on the heat again (medium heat), add in soy sauce and stir until everything is well combined.

Step 5: Pour the curry over the udon, garnish with chopped green onion and serve.
