Yen Can Cook ~ Hairy Gourd & Black Eyed Peas Soup
Hairy Gourd, it is referred to as Jie Gua in Chinese and it is also known as fuzzy melon. is a vegetable. Delicate, almost bland taste hairy gourd is full of several nutrients, minerals and vitamins. Vitamin C, antioxidant and anti-inflammatory properties presents in hairy gourd form a very effective defensive line against improving physical performance. Other health benefits that you can enjoy with the help of hairy gourd is lower blood pressure and keep blood sugar steady.
The gourd is also said to be contains the “body-cooling” benefit which can help clear heat and dampness in our body, according to the traditional Chinese medicine.
Black-eyed peas, also known as cowpeas, despite their name, black-eyed peas are not peas but rather a type of bean. They’re generally very pale in color and feature a large black, brown, or red spot that resembles an eye. Black-eyed peas are incredibly nutrient-dense, packing plenty of fiber and protein. They’re also a good source of several important micronutrients, including folate, copper, thiamine, and iron.

Hairy Gourd with Glass Noodles & Dried Shrimps
Ingredients (Serve: 3-4)
1 hairy gourd, peeled and cut into big chunks
400g pork ribs/pork soup bones/chicken
6pcs chicken feet
60g black eyed peas, soaked in water for at least 3 hours
50g peanuts, soaked in water for at least 3 hours
2 candied dates
2 slices ginger
2500ml water
Salt to taste

Step 1: Put pork ribs/pork soup bones/chicken and chicken feet into a pot of water and bring to boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: Put all the ingredients (except salt) into a pot and add in water until enough to immerse all the ingredients. Bring to boil and lower the heat and let the soup simmer for 2-3 hours.
Step 3: Season with salt and serve.

I see your soup got chicken feet….mmm, more flavour! 😉 I’ve not made soup with hairy gourd (jit kua). I think I’ll like it since I like the softness of the gourd.
Kris, I don’t know the chicken feet can contribute more flavours to the soup, I thought they can make the soup more gelatinous. 😛
