Yen Can Cook ~ Oyster Sauce Scrambled Egg
One extra step to elevate your usual scrambled egg!
Ingredients (Serve: 3-4)
6 eggs, at room temperature
4 stalks spring onions, cut to 1 inch sections
3 tablespoons milk
1/2 teaspoon salt
A dash of white pepper
Cooking oil
Sauce
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 teaspoon dark soy sauce
1 tablespoon sugar
1/2 tablespoon corn starch
100 ml water

Step 1: In a bowl, add in the all the ingredients of sauce, mix until well combined. Set aside.
Step 2: Beat the eggs in a large bowl, add in milk, salt and white pepper, mix well.
Step 3: Heat oil in a frying pan or wok, pour in the egg mixture (Step 2). Use a spatula to fold the eggs gently but quickly until it is almost cooked but still moist. Dish up and set aside.
Step 4: Heat 1/2 tablespoon of oil in the same frying pan, stir fry the spring onion till fragrant.
Step 5: Add in scrambled egg (Step 3) and sauce mixture (Step 1), stir fry till the sauce has thicken to your preferred consistency. Serve.
