Yen Can Cook ~ Prawns & Diced Veggies Stir Fry
I’ve wrote a few stir fried diced vegetables recipes like THIS and THIS, which are really great to clear your fridge before weekends (weekends are my day off from the kitchen and shop for new batch of grocery). Here’s another recipe that can be added to the collection.
Ingredients (Serve: 3-4)
150g prawns, shelled and deveined
1 Japanese cucumbers, diced
1 carrot, diced
60g corn kernels
1 tablespoon soy sauce
Salt to taste
Cooking oil
Marinade
1.5 teaspoons soy sauce
1.5 teaspoons Chinese cooking wine
1/2 teaspoon pepper
1 teaspoon corn starch

Step 1: Marinate the prawns with marinade for 20 minutes.
Step 2: Boil a pot of water and blanch the corn kernels and diced carrot for 1 minutes. Remove, drain and set a side.
Step 3: Heat oil in a frying pan or wok, stir fry the marinate prawns (Step 1) until they are just cooked (for roughly 2 minutes). Remove and set a side.
Step 4: In the same pan, toss in blanched vegetables (Step 2), stir fry for 1-2 minutes. Add in diced cucumber and prawns (Step 3), swirl in soy sauce and continue to stir fry for another 1 minute.
Step 5: Season with salt if desired and serve.

The prawns look succulent. But I have never eaten them with corn. I wonder how the combination taste like.

Kris, I bought blue & red rimmed bowls and plates, like the vintage feel of them. The fake monstera leaf is from Ikea. 😛
Yums! This is interesting. My first time seeing generous prawns being fried with corns, carrot and cucumber. You are so talented in the kitchen.
