Yen Can Cook ~ Stuffed Ring Roll

If you’re people who like to host a party or any sort of casual get-together at home, the chances of ending up with too much food is a very common mistake. The top reason the party end up with an overwhelming amount of leftovers is the fear of under-catering – the panic of not having enough food for the guests, right? *I can see some of you are nodding in agreement. (^∀^)


Don’t let that awesome food go to waste. I’m sharing easy ways to repurpose two of your common ingredients when you had a steamboat dinner at home – the Ring Roll 铃铃卷 & prawn/fish paste. 

Ring Roll

 

Prawn Paste

 

Ingredients (makes 8rolls)

8pcs ring roll

300g prawn/fish paste (2 packets)

4pcs of seaweed sheet

100g corn flour
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Step 1: Cut the seaweed sheet into width of the ring roll, 1 pieces cut into 2 smaller pieces. Set aside.
Step 2: Soak the ring roll in water for 10 seconds and open it like the photo above.
Step 3: Slightly pat dry the ring roll with kitchen towel, squeeze the prawn/fish paste on the ring roll then flatten it. 
Step 4: Place a piece of seaweed (Step 1) on top of the prawn/fish paste. 

Step 5: Roll up then dust some corn flour on the surface of the roll evenly. Air fry in air fryer, 180°C for 10-15 minutes or until golden brown. Flip and cook another in between for even browning.

Step 6: Cut and serve.
