Yen Can Cook: Braised Pork Ribs with Peanuts
As I’ve mentioned before, I like pork ribs and I will normally restock them whenever I go for groceries shopping. There are numerous of pork ribs recipes that I want to try out one by one, or do you have any simple but interesting recipes to share with me?
Today’s recipe is my kind of comfort dish. The gravy pairs well with a bowl of steaming hot rice while the braised-till-soft peanuts are my favourite!
Ingredients
500g pork ribs
100g peanuts (soaked in water a night before cooking)
3-4 Shiitake Mushroom (fresh or dried) – optional
3- 4 bean curd puffs – optional
1 tablespoon soy sauce
1 teaspoon dark soy sauce
1 cube red fermented bean curd (Nam Yue)
2 teaspoon Shaoxing wine
1 teaspoon rock sugar
4 cloves garlic
5 cups of water
Salt to taste

Step 1: Put the pork ribs into a pot of water and bring to boil, to remove blood and impurities. Remove, drain and set aside.
Step 2: In a wok, heat up some oil then add in garlic and fried till fragrant
Step 3: Add in the pork ribs, mushrooms and peanuts, stir fry for 2 – 3 minutes then add in soy sauce, rock sugar, red fermented bean curd, bean curd puffs and water, bring to boil then simmer on low heat.
Step 4: Cook till the peanuts are soft and the pork ribs should be quite tender as well at this moment.
Step 5: Add in dark soy sauce for colouring and season with salt in necessary.
Step 6: Drizzle on the Shaoxing wine and mix well.
Step 7:Serve.

Yummy! The peanuts would add extra delicious flavour.
I like how soft the peanuts were and they really absorbed the flavors of the gravy, yum~
How long did you have to braise your pork ribs and peanuts? I boil pork ribs and peanuts soup for 4 – 5 hours and the peanuts are still not as soft as I would like. If the peanuts are soaked overnight, wouldn’t the skins fall off?
Maybe you can soak the peanuts overnight or even boil to soften them before braised with pork ribs. Some of the skin will fall off after soaking.

Have you try steamed pork ribs with tomato and plum sauce. Quite yumms if you get the right amount of both mixture.
I’ve tried put tomato in my steamed pork ribs with bean paste but never try plum sauce. Thanks for your recipe and I’ll try it out one day 🙂
