Yen Can Cook ~ Chicken Burdock Corn One Pot Rice

I like how easy are one pot meals to prepare. They are best way for weeknight dinners, especially if you’re the one cleaning up afterward. It is my favorite option for times when we are tired or when we don’t have time for cooking. I’ve shared several one pot dish recipes like THIS, THIS and THIS, today’s recipe is another comfort food that great for a weeknight dinner that comes together in just about 30 minutes.


I’m using Burdock (牛蒡) in this one pot rice, Burdock root to be exact. Burdock root is a vegetable that’s native to northern Asia and Europe, several species have been widely introduced worldwide.  Burdock root is very crisp and has a sweet, mild, or pungent flavour with a little muddy harshness. 

Burdock root has been a part of traditional medicine, particularly traditional Chinese medicine. It contains multiple types of powerful antioxidants, effectively detoxified blood and promoted increased circulation, anti-inflammatory and antibacterial properties that can help resolve skin issues such as acne, psoriasis, and eczema.

 

1 boneless chicken whole leg, cut into small bite size

200g corn kernels (fresh or canned)

1/2 burdock, peeled and diced, soak in water to prevent browning

1/2 yellow onion, chopped

1 cup of rice

1 tablespoon of soy sauce

Salt to taste

Cooking oil

Water

Step 1: Marinate the chicken with soy sauce for 10 – 20 minutes.

Step 2: Heat up the pot with oil, add in diced yellow onion, saute till fragrant and the onion turns slightly translucent. 

Step 3: Add in chicken, stir fry till it turns white, followed by diced burdock root and continue stir fry.

Step 4: Add in corn kernels, rice and 1.1 cup of water.

Step 5: Bring to boil, put on the lid and turn to low heat, simmer for 15 minutes. 

Step 6: Season with salt and serve.

Note: Since every stove top and every piece of cookware transmits heat a little differently, the cooking time might need to adjust accordingly.
