Yen Can Cook: Baked Sweet Potato Sticks
An extremely quick and healthy snack that combines 3 “super ingredients” ~ sweet potato, olive oil and sesame seeds!
Sweet potato: High in vitamin B6 and fiber as well as a good source of vitamin C.
Olive oil: Its benefits are so extensive that it is considered a functional food with components that contribute to its overall therapeutic qualities including a reduction of risk factors of coronary heart disease, the prevention of cancers, and alterations of immune and inflammatory responses.
Sesame seeds: Rich in quality vitamins, and minerals such as Vitamin B1, B6, Calcium, iron, manganese, zinc and etc. It also contains anti-oxidants and help to stave off harmful free radicals from the human body.
Ingredients
2 sweet potatoes
1 tablespoon olive oil
2 teaspoon sesame seeds
1 teaspoon castor sugar

Step 1: Cut sweet potato into stick form.
Step 2: Add in olive oil and sesame seeds, mix well and coat evenly on sweet potato sticks. (use your hands for the best result!)
Step 3: Preheat oven. Line a baking paper on baking tray, arrange the potato sticks on the tray. Sprinkle the castor sugar on the sticks before sending into oven. Bake 15-20 minutes with 200°C or until golden brown.
The texture is not entirely crunchy but slightly caramelized on the outer with soft inner.

Very simple to make…but I’d leave out the sugar coz the sweetness of the sweet potato will be enough for me! 😉

I don’t have an oven so I always end up steaming the sweet potatoes for the kids 🙁
Steaming definitely healthier but I believe this baked version will also well received by the kids 🙂
