Yen Can Cook ~ Bean Sprouts with Salted Fish
One of the activities that I’ve done during the first MCO period (March 2020) was growing my own bean sprouts aka taugeh at home. The steps are simple and no special equipment is needed, you’ll be rewarded by your home grown bean sprouts after 5 days.

Today’s recipe is a very common and classic way to cook bean sprouts – stir fry with salted fish. The addition of salted fish in this vegetable stir fry imparts an appetizing savouriness to the originally mild tasting bean sprouts.
Ingredients (Serve: 3-4)
500-600g bean sprouts (taugeh), tail trimmed (optional)
50g salted fish, cut into small cubes
3 gloves garlic, sliced/minced
1 bunch of spring onion, cut into to 2 inch length
1 red chili, julliened (optional)
1.5 teaspoon Shaoxing wine/cooking wine
1/4 teaspoon white pepper
Cooking oil
Salt & sugar to taste

Step 1: Heat cooking oil in wok, pan fry the salted fish cubes until golden brown and crispy. Dish out and set aside.
Step 2: In the same wok, saute garlic till fragrant. Add in bean sprouts and julliened chili, stir fry until the bean sprouts just softened, about 20-30 seconds.
Step 3: Add in Shaoxing wine and white pepper and continue to stir fry and toss the bean sprout.
Step 4: Add in spring onion and fried salted fish (Step 1). Toss to mix well. Add salt and sugar to taste.
Step 5: Serve.

Your fresh home grown bean sprouts are beautiful! I tried growing them before but not very successful. Beansprouts fried with salted fish is guaranteed delicious!

Stir-fried taugeh is something I find we can’t do as well at home (as the restaurants) coz it needs very high heat so that it takes mere seconds to fry the bean sprouts…otherwise it starts leaking water.
Kris, exactly! So I turn my stove to the highest to get the best result.
Need some steamed chicken next to this. haha
