Yen Can Cook ~ 15-Minute Yaki Udon
Easy weeknight dinner made in a single pan! This Yaki Udon is a quick recipe which needs simple ingredients to make a scrumptious stir fried noodles meal in just 15 minutes! It’s great opportunity to use up leftover vegetables from your fridge too!

Udon in Tomato Pork Slices Soup
Ingredients (Serve: 3-4)
3 packets udon
300-350g sliced beef/chicken/pork/shrimp or extra vegetables for vegetarian version
3 cloves garlic minced
1/2 yellow onion, sliced
200g-250g cabbage, shredded
1 carrot, julienned
4-5 Shiitake mushrooms, sliced
Cooking oil
Chopped spring onions & sesame seeds for garnishing (optional)
Marinade
1/4 teaspoon salt
1/4 teaspoon pepper
Sauce
1.5 tablespoons dark soy sauce
3 tablespoons oyster sauce
1.5 tablespoons mirin
1.5 tablespoons brown sugar/castor sugar
1/2 tsp chili flakes (optional)

Step 1: Cook the udon according to the package instruction, drain and set aside.
Step 2: Marinate the sliced beef with marinade for at least 10 minutes. In a bowl, add in all the sauce ingredients, mix to combine.
Step 3: Heat oil in a wok or a large pan, cook the marinated slice beef (Step 2) until change colour. Remove and set aside.
Step 4: Add oil to the same wok, saute onion until soften, add in garlic, and cook until fragrant. Add in cabbage, carrot, and mushrooms, and continue to cook for 2-3 minutes or until soften.
Step 5: Add the udon (Step 1), beef (Step 3), and sauce (Step 2), toss them together until the noodles are evenly coated.
Step 6: Garnish with chopped spring onion and sesame seeds. Serve.

Your Yaki Udon looks fabulous! Best part is you used beef hee..hee.. Somehow I don’t really like udon. Maybe it is the texture, I can’t even explain.
PH, initially planned to use pork but I found a piece of beef sitting in my freezer, so just used it up!
I’m like PH, don’t quite like udon (but in soup). Stir-fried udon with beef (like the one you made) I would like…after all it kinda mimics fried Hokkien mee right, in texture….hehehe! 😉
