Yen Can Cook ~ Braised Pumpkin with Minced Meat
Pumpkin is very versatile and can be cooked in many different ways, in western or Chinese style. It can be roasted, stewed, stir-fried and make into salad. It’s one of my favourite vegetables to buy as pumpkin can be stored longer compared to leafy greens. On top of that, pumpkin is highly nutritious and particularly rich in Vitamin A. It is also rich in antioxidants and loaded with nutrients that can boost our immune system.
Ingredients (Serve: 3-4)
600g-700g pumpkin, cut into large chunks
100g minced meat (pork or chicken)
1/4 thumb-sized ginger, chopped
3 cloves garlic, sliced
2 tablespoons cooking wine
2 tablespoons soy sauce
1/2 teaspoon oyster sauce
Sugar to taste
500ml water
Cooking oil
Chopped spring onion for garnishing (optional)

HAPPY COOKING! #stayhealthy #staysafe

OMG, I so love pumpkin these days….and I’m sure I’d love this dish. This one would taste a lot better than potato with minced meat. I only recently got “acquainted” with pumpkin after eating it at a chap fan stall. At that time, I thought I was scooping sweet potatoes. So, I’ve never bought pumpkin to cook before…I must go get one soon! 😉 Do they take long to soften (or they’re about the same as potatoes)? Must remove the skin, right (though I remember seeing some with skins on). ;D
Kris, yeah, although I’m not a big fan of pumpkin but I found this dish suits my taste bud very well. You can remove or retain the skin, depends on your preference and type of pumpkin (organic?) you got. Can’t really remember the time to soften the pumpkin, but it’s not very long, nonetheless.
memang comfort food, love it.
KY, when you wanna try out this recipe? ^__*
