Yen Can Cook ~ French Beans & Pickled Mustard Stir Fry (Vegetarian)
A quick vegetarian stir fry for a simple weeknight meal. Less than 20 minutes to make from start to finish!
Ingredients (Serve: 3-4)
300g French Beans
100g pickled mustard, shredded and soak in water for 20 minutes.
3 cloves garlic, minced
Cooking oil
Seasoning
1/2 teaspoon Chicken Bouillon granules
1/4 teaspoon sugar
50ml water
Salt to taste

Step 1: Trim the tough end of the French Beans, cut into 2.5 inch lengths. Set aside.
Step 2: Bring a pot of water to boil, add in 1/2 teaspoon of salt and a drizzle of cooking oil (not in ingredient list), blanch the French Beans (Step 1) for one minute. Drain and set aside.
Step 3: Heat up cooking oil in wok over high heat. Add the minced garlic and stir fry until fragrant.
Step 4: Add shredded pickled mustard, stir fry for 1 minute and add in blanched French Beans (Step 2), Chicken Bouillon granules, sugar and water, toss to mix well. Cover the lid and let it cook for another 1 minute. Season with salt as per desired.
Step 5: Dish out and serve.

Yours is the vegetarian option. I cook this all the time too…but with minced pork and I finely chop my char choy in trying to mimic the popular Esquire Kitchen’s stir-fried french beans dish (which I love)…hehe! 😉
Kris, you, TM & PH all of you mentioned about Esquire Kitchen, seem like this dish is quite a popular choice in the restaurant, but too bad I never tried it.
When I saw your dish, I thought of Esquire Kitchen. So coincidence, Kris mentioned Esquire Kitchen and cooks them with the restaurant’s style which I love.
TM, sometimes I add minced meat when cooking this dish also.
Now I remember this vege that I used to love at Esquire Kitchen. I did try to copy cat at home before but cannot jadi hah..hah..
PH, the chef must have some secret ingredients to make the dish so successful and well loved by three of you! 🙂
