Yen Can Cook: 3 Cup Mini King Oyster Mushrooms (Vegetarian)

Seeing my pot of overgrown basil in my balcony garden and some of the leaves are starting to turn yellow, I decided to whip up this easy peasy 3 cup Mini King Oyster Mushrooms for dinner one evening. You may use any kind of mushrooms, such as Shiitake Mushrooms, Eryngii Mushrooms or Oyster Mushrooms.

Ingredients (Serve: 3-4)

250g mini King Oyster mushrooms, cut into bite size

1 1/2 tablespoons sesame oil

1 1/2 tablespoons Shaoxing wine

1 tablespoon light soy sauce

1 teaspoon dark soy sauce

1/2 teaspoon sugar

5 cloves garlic

6 slices ginger

A generous handful of fresh basil leaves

40ml water


Step 1: Heat sesame oil in wok and add garlic cloves, ginger, stir fry until fragrant.

Step 2: Add mushrooms, stir fry briefly. Sizzle Chinese wine and add light soy sauce, dark soy sauce, sugar and water. Stir evenly, and cover the lid to simmer for about 5 minutes, or until the mushrooms are cooked and tender soft.

Step 3: When the dish is cooked, stir in the fresh basil leaves before serving.
