Yen Can Cook: Bacon Vegetables Soup
Still remember I’ve shared the recipe of Borscht (Hong Kong Style) Luo Song Tong 罗宋汤? Its soup base is cooked with beef and I received response from readers that if the beef can be replaced with other meat such as chicken or pork. Here I’ll share with you guys a similar vegetables soup but with one of the favourite ingredients of many~ bacon!
Ingredients (Serve: 3-4)
50g bacon, cut into small pieces
200g tomatoes, diced
350g cabbage, sliced
1 carrot, diced
1/2 onion, chopped
1-2 cloves garlic
1-2 bay leaves
Salt and black pepper to taste
Step 1: In a deep pot, stir fry the bacon until light golden brown. Add in garlic and onion continue stir fry until onions are translucent and soft.
Step 2: Add in diced tomatoes and stir fry 2-3 minutes or until they are soft. Add in cabbage and carrot, continue to stir fry.
Step 3: Pour in water and bay leaves, simmer until all the vegetables are soften to your preferred texture. Seasons with salt and pepper, serve.
This is another soup that I love to prepare for my carbo-less dinner. Types and amount of vegetables can be adjusted according to personal preference.
What’s better to have this for the recent rainy season, it’s hearty and totally my kind of comfort food.
