Yen Can Cook ~ Black Beans Red Dates Soup
A simple and easy Chinese boiled soup but packs with nutrition ~ Black Beans Red Dates Soup. Ingredients need are easily obtained from grocery stores or supermarkets.

Ingredients (Serve: 3-4)
400g pork ribs/pork soup bones/chicken
200g black beans
10-12 red dates, de-seeded
Handful of wolfberries (Goji)
2500ml water
salt to taste

Step 1: Rinse black beans, drained, stir-fry in a preheated wok without oil over a low heat until fragrant.
Step 2: Soaked the black beans for an hour, discard soaking water and drained.
Step 3: Put the pork ribs/pork soup bones/chicken into a pot of water and bring to boil, to remove blood and impurities. Remove, drain and set aside.
Step 4: Put all the ingredients (except the wolfberries & salt) into a pot and add in water until enough to immerse all the ingredients. Bring to boil and lower the heat and let the soup simmer for 2-3 hours.
Step 5: Add in wolfberries, season with salt and serve.

Soak the black beans and peanuts? Were there peanuts in the soup? I’ve never boiled soup with black beans before but then I see you have to stir-fry the beans first. Aiyah, that discourages me from using them…haha! 😀 Will the soup taste different if you just put them in without frying?
