Yen Can Cook: Starfruit Soup
I’ve recently bought a cookbook which is all about Chinese boiled soup, so expect more soup recipes will be featured here in my blog. There are many interesting recipes in that cookbook, using some unusual ingredients for boiling soup and this is one of them.
Starfruit, a distinctive fruit with five ridges on its body and it resembles a star when cut in cross-section, hence its name. They can be served as fresh fruit or made into relishes, preserves, juice drinks but boiled soup? Definitely my 1st time! Let’s check it out together!
Ingredients (Serve: 4-5)
15g South apricot kernels (南杏)
10g North apricot kernels (北杏)
Both apricot kernels can get from Chinese medicine shop. As I’ve mentioned in my previous recipe, the North apricot kernel (北杏) is slightly poisoning, so please consume under doctor advise.
3 honey dates (蜜枣)
8 dried figs (无花果)
1 slice of ginger
600g lean pork meat
Salt to season
Step 1: Clean the starfruits and cut into slices. Set aside.
Step 2: Bring some water to a boil, scald the lean meat in the hot water for 5 minutes. Rinse and drain, set aside.
Step 3: Put all ingredients in a pot, add in water and bring to a boil over high heat for 5 minutes. Turn to low heat and simmer for 3 hours. Season with salt.
Step 4: Serve.
This soup help to nourishing the lungs, expels heat and phlegm as well as stops cough.
