Yen Can Cook ~ Chives & Dried Shrimp Omelet

I always have sufficient supply of home grown chives from my mom because she has a few pots of chives in her garden. #blessed πŸ™Β 


Other than a simple omelet dish that I’m going to share today, I like to associate chopped chives into meat filling for my dumpling for its distinctive garlicky note. Instead a basic chives + egg version, I added dried shrimp for that extra umami taste to the omelet. The omelet tasted very similar with the Chives Pancakes that I posted previously. (γ€ƒβˆ‡γ€ƒ)

Ingredients (Serve:3-4)

70-80g chives, cut into 3cm lengths (or your preferred length size)

4 eggs, beaten

15g dried shrimps, soaked in water and chopped

1/2 teaspoon fish sauce

A few drops sesame oil

Cooking oil

Step 1: Add fish sauce and sesame oil into the beaten egg, set aside.

Step 2: Heat cooking oil in a pan and stir fry dried shrimps until fragrant. Slightly let cool and add into the egg mixture (Step 1).

Step 3: Add some cooking oil in the same pan, cook the chives for a few seconds to release their aroma. Pour the eggs into the pan and swirl the wok to let the egg cover the base of the wok. Allow egg to cook and set for about 2 to 3 minutes. Then flip over and fry till both sides are golden brown.Β 

Note: You may do the scrambled style too instead of omelet.

Step 4: Serve.
