Yen Can Cook ~ Soft Chocolate Chips Cookies

Still remember the “Almost Famous Amos” Chocolate Chips Cookies recipe that I shared previously? Recently, I’ve baked another version of chocolate chips cookies which have softer and slightly chewy texture if compared with the former. The ingredients needed and the steps are more or less the same, with just a few small differences. This batch that I baked was darker in colour because I used dark brown sugar and the texture was slightly dense because I overbaked them for 5 minutes. I’ve made another attempt and they were perfectly soft and chewy, so let’s check out the recipe!

Ingredients

250g all purpose flour

170g unsalted butter, soften to room temperature

225g chocolate chips

150g brown sugar (I used dark brown sugar and reduced to 100g)

50g granulated sugar (I reduced to 30g)

2 teaspoons corn flour

2 teaspoons vanilla essence/extract 

1 teaspoon baking soda

1/2 teaspoon salt

1 egg

Step 1: In a large bowl, beat the butter, brown sugar, and sugar using a mixer until combined and creamy. Add in the egg and vanilla and continue to beat on low speed until just incorporated.

Step 2: Add dry ingredients of all purpose flour, cornstarch, baking soda and salt into the wet ingredients, then mix until crumbles form. Use your hands to press the crumbles together into a big dough.

Step 3: Add the chocolate chips and incorporate with your hands.

Step 4: Cover dough tightly with plastic wrap and let it rest in fridge for at least 1 hour and up to 2 days.

Note: Chilling step is mandatory for this cookie dough.

Step 5: Remove cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes. Preheat oven to 180°C. 

Step 6: Roll balls of dough, about 1.5 tablespoons of dough each, into balls. Place on the lined baking sheet and bake for 10-12 minutes until the cookies look puffy and dry. Do not overbaked and take them out even if they look like they’re soft and not done yet.  

Step 7: Let them cool on the baking sheet for a good 5-10 minutes. If desired, while the cookies are still warm, press a few extra chocolate chips into the tops.

Step 8: Transfer cookies to a cooling rack to cool completely. Store the cookies in an airtight container.
